Fresh lemon juice is used in the yummy sauce that can be topped on Salmon Cakes.
- 1⁄2 cup light mayonnaise
- 1⁄4 cup light sour cream
- 1⁄2 lemon, juice of
- 3 teaspoons fresh parsley, chopped
- capers, drained to taste
- Mix all ingredients until blended and smooth.
- Top over warm salmon cakes.
I had purchased some capers and wanted to use them......I must have read 20 or 30 recipes on Food.com for lemon caper sauce before I found this quick and easy one that I could make from items I had on hand. It is delicious and SO easy! We spooned it over pork chops and loved it! I will be making this again, it has so many potential uses: over chicken, fish, it was good on the pork chops we had tonight, and even the salmon cakes the poster used it for!! I made salmon in a skillet over red onions. Served it with white rice with the sauce. The sauce by itself had an interesting flavor, but once we added it to the rice and salmon it mellowed and was rather tasty. Not the best lemon caper sauce I've had, but it was good.
