An S meal to serve with bread or plan-approved pitas

  1. Preheat oven to 400F.
  2. Season thighs with paprika, salt, pepper.
  3. Melt 4 T butter in a large oven-proof skillet.
  4. Add chicken, skin-side down; sear 2-3 minutes per side. Drain fat and set aside.
  5. Melt remaining 2 T butter in skillet.
  6. Add garlic and cook until fragrant, 1-2 minutes.
  7. Stir in broth, cream, pecorino romano, lemon juice and thyme. Bring to a boil.
  8. Reduce heat, stir in spinach and simmer until spinach has wilted and sauce has thickened, about 3-5 minute.
  9. Return chicken to the skillet.
  10. Place skillet in the oven and roast 25-30 minutes, until done.
