I love beets but have never eaten beet greens until today. Many times the greens have seen better days but this bunch of beets had lovely fresh looking greens so I used this recipe but diced half a red onion that I sautéed in the olive oil/butter mixture and then added the garlic and then the greens. The lemon juice is a must, and of course salt and pepper. I served it at room temp with sliced roasted beets and crumbled goat cheese. It was wonderful!

This was great. I changed the recipe slightly, adding a small round of goat cheese and a couple slices of chopped bacon as well.... Yummmy!! More importantly, my husband loved it!

Yum AND easy! This is probably a dumb comment....but I wasn't sure if you meant 2lbs of greens or the greens from 2lbs of beets. Anyway, I used the greens from 2 bunches of beets and it turned out great. Thanks Chef Gruyere.......

Wow! I used beet greens and collard greens. Just rough chop the collards and put them on the bottom of the pan. I had to stop myself from eating it all before my husband got home.

My first time eating beet greens and this was fantastic! Fairly similar to spinach. I will grow beets for their tops from now on! Thanks for the recipe.

Delicious, my tops had baby beets attached, I cut them off and par boiled them, then cut them in half and added them to the greens. loved the addition of garlic and lemon juice. I will be making this again, thanks for posting.

Oh my goodness, who would have thought beet greens could be so good!! I did change a few things: -I did not use baby beet greens, just regular ones; -I rough-chopped the greens to make them easier to eat, and cut the red stems completely off, chopping them into 1/2" chunks, which I added to the pot; -I'd run out of fresh garlic so I used 1/2 teaspoon garlic powder; -I used 1 tablespoon lemon juice, 1/4 teaspoon each salt and pepper (be sure to use freshly ground pepper) Simple, fast, dee-lish!!

These are really super good!!!! The natural saltiness of beet greens tasted so good with garlic lemon butter!!! I only had three beet tops so I didn't quite have 2 lbs but I will make this recipe any time I have beet green tops and with all types of greens like chard or spinach!! Thanks for the recipe!!!!!!
