A very easy recipe handed down from my Nana. It makes a lovely fresh filling for tarts and cakes. For an extra special cake filling, gently mix together with whipped cream.
- Combine all ingredients in a heat-proof bowl.
- Whisk constantly over simmering water until the mixture coats the back of a metal spoon.
- Remove from the heat and pour into warm, sterilized jars.
- When cool, store in the refrigerator till required.
