- 1⁄2 cup butter, softened
- 2 eggs
- 1 cup sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1⁄2 cup milk
- 1 teaspoon poppy seed
- 1⁄8 teaspoon salt
- 1 1⁄2 cups all-purpose flour

GLAZE
- 2 tablespoons lemon juice
- 1⁄2 cup confectioners' sugar
directions
- In bowl cream butter and sugar.
- Beat in eggs, lemon juice, and peel.
- Combine flour, baking powder, and salt in seperate bowl.
- Stir dry ingredients into creamed mixture alternately with milk.
- Pour into greased loaf pan.
- Bake at 450 degrees for 45 minutes.
- Glaze: Mix lemon juice and confectioner's sugar together.
- Immediately drizzle over loaf upon removal from the oven.

I am not very good with cooking, so i get many recipes online. I am trying to cook more mediterranean dishes, to be more healthful. I grew up in the sticks, so we ate a lot of home grown, home killed food. Living in a city has definitely changed the way we eat.
