We are fortunate that very good friends of ours have a blueberry farm, so we are the recipient of flats of these little wonders each year. I am always on the look out for good blueberry recipes. This one is really, really yummy!!!

  1. For Crust: In a bowl, combine butter and lemon juice. Add crumbs and mix well. Pat evenly over bottom and sides of 12" pizza pan. Bake at 350 oven fir 5 minutes. Let cool.
  2. Filling: In a small bowl, beat cream cheese, icing sugar and lemon rind until fluffy. With mixer at high speed, slowly pour in cream and beat until combined. Spread cream mixture evenly over crust. Top with berries.
  3. Topping: In saucepan, combine sugar and cornstarch. Stir in water and berries. Cook over medium heat, stirring, until mixture boils and becomes thick and clear. Remove from heat and stir in lemon juice. Set aside to cool slightly.
  4. Spoon slightly cooled topping over berries. Cover and chill until set, about 1 hour.

I took a picture of my mess, but thought I would comment... I left out the whipping cream on accident. I will try this one again... the RIGHT way... in a few weeks. I couldn't figure out what was wrong with it *laugh*
