I adapted this from a recipe from Paula Deen's magazine.
- 1 lb chicken breast
- 1 -2 celery rib
- 2 tablespoons fresh basil
- 2 tablespoons fresh lemon juice
- 1⁄2 cup light sour cream
- 1⁄2 cup reduced-fat mayonnaise
- 1 teaspoon salt
- black pepper
- Poach chicken breasts and cool. Finely chop chicken, celery, and basil. Add mayo, sour cream and seasonings. Mix and cool.
What a nice, refreshing take on chicken salad! The fresh basil really kicks it up a notch. I was short on time and got a rotisserie chicken which made it even easier. I am like Paula, I used full sour cream and mayo. LOL I toasted some almonds and added about 1 teaspoon more lemon juice and some zest. Next time, I may try a bit of dijon mustard and some finely chopped red onions as well. Thanks for posting, COMOCOOK.
