Lemon-Basil Chicken Burgers

I came up with this recipe when I was trying to be cheap and healthy, and only use things I already had in my kitchen. Saffron isn't cheap, and I added it for flavor, but since it's expensive you can leave it out.

  1. Warm lemon juice. Add saffron threads. Let set aside to sit for at least 10 minutes until bright yellow.
  2. Empty ground chicken into a mixing bowl. Add egg white, crushed garlic, black pepper, sea salt, and dried basil. Add the lemon juice/saffron mixture. Mix until well blended.
  3. Separate the meat mixture into patties of desired size.
  4. Add a small amount of olive oil to a pan or skillet and grill the ground chicken patties until cooked all the way through (you may want to use a meat thermometer).
  5. Serve on toasted whole grain hamburger buns with fresh basil as a topping, along with any other hamburger toppings you desire.
