Lemon Barbecued Chicken

"I was leery of this recipe when I found it in a magazine. But I decided to try it anyway, and was I ever glad! This is absolutely superb. I thought it would be too lemony, but it wasn't. And so moist. A great recipe for a crowd."

  • Mix all ingredients, except chicken, to make marinade. Set aside 1/4 cup for basting.
  • Put chicken & marinade in resealable bag. Refrigerate overnight. Turn in the morning.
  • When coals are ready (medium heat), grill the chicken, covered for 45 minutes or until done. Turn and baste every 10 minutes.

I've been married to a gourmand for 41 years, so I get lots of practice cooking.
