ingredients

  • 16 ounces fish fillets, 1/2 to 1 inch thick (flounder, sole or orange roughy)
  • nonstick cooking spray
  • 12 cup crushed corn flakes
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon butter, melted
  • 1 tablespoon finely shredded lemon peel
  • 12 teaspoon black pepper
  • lemon wedge

  • Thaw fish if frozen. Coat a 15 by 10 inch baking pan with cooking spray. Place fish in prepared pan, tucking under any thin edges.
  • In a small bowl combine corn flakes, Parmesan cheese, butter, lemon peel, and pepper.
  • Sprinkle crumb mixture over the top of fish. Bake in a 450 oven for 4-6 minutes per ½ inch thickness of fish or until fish flakes easily with a fork and crumbs are brown.
  • Serve with lemon wedges.

<p>My rating system: (I don't like giving bad reviews, so if I don't like it, I'll just not review it.) <br /><br />5 Stars OMG, this is one of the most amazing things I've ever eaten! I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
