Leighdear's Buffalo Chicken Dip Goes Main Course (Low Carb)

"As I have stated before I mostly gather, modify and review recipes instead of designing them and this is one of those recipes. The recipe came from LeighDear at LowCarbFriends.com and is one I did not modify at all. It is a REALLY good dish that my family loves and has been getting great reviews.   • Preheat oven to 350°F.
  • Season chicken with salt and pepper.
  • Sauté in oil til browned.
  • Place in greased 13x9 baking dish.
  • Beat the cream cheese with a hand mixer until very smooth, then beat in Ranch dressing and hot sauce. (This is the only way to avoid small lumps of cream cheese). Stir in shredded cheese.
  • Spread over chicken in baking dish.
  • Bake at 350°F for approximately 20-25 minutes.

  1. Awesome! I used bone in 1/2 chicken breasts.Up'ed the hot sauce, I used Texas Petes Buffalo sauce, Franks wasn't available. Cooked the breast 1/2's in the oven for 1/2 the time then poured the sauce over the breasts and cooked until done. Thanks for a keeper!
     
  2. I made this exactly as written and would not make any changes. I used my standing mixer with the whip attachment (no hand mixer) and forgot to whip the cream cheese before adding the other ingredients. It was a little lumpy but smoothed out fine when I baked it. The chicken was perfect after 25 minutes. I served this with Recipe #155018. (Originally reviewed 11/8/10 but the stars vanished. :/)
     
  3. Oh. My. This was sooooo good. The husband and teenagers LOVED it. A few changes I made: doubled the sauce and omitted the cheddar. 5 minutes before chicken was done I topped it blue cheese crumbles. Reeealllly good. This is a keeper!
     
  4. Very good! Was a bit greasy and I would take the advice of Blissful74 and bake the chicken without browning it in the oil. I used low fat Cream Cheese and light ranch dressing and it turned out nice and creamy. Fried Shrimp also tasted good in this sauce.
     
  5. The idea of this is pretty good. I'll definately try again with a few modifications. Next time, I will omit the cheese. I think it made the sauce greasy. Also, I don't think its necessary to add all the fat using the frying/browning process - next time I will just bake the chicken with the sauce.

Tweaks

  1. Used 3 large chicken breasts, but can use 4 large breasts and still have enough sauce, since we like ours extra saucey. Added in some diced green onions.
     
  2. I soften cream cheese in microwave, add crumbled blue cheese over top of dish before baking.

I grew up in Tucson but moved to Colorado in 1989 and live in a household with my husband, Dad, daughter and 3-year old twin granddaughters. Our 8-year old grandson spends 2 nights a week with us. All of that adds up to often difficult menu ideas to met everyone's tastes. Zaar is very addicting and I love trying the recipes I find here. I like to find recipes of people that I see are still active on Zaar and love it when I hear back from the Chef after I review the recipe. Everytime someone reviews one of my recipes, I like to find one of theirs to make and review as quickly as possible. It's a way for me to find great chefs I don't know yet too! My husband has high blood sugar so we try to watch our carbs, but it is not easy because we love them so much! I was diagnosed with brain tumors in 2005 and so far have had 5 surgeries that have left my eyelid droopy. I hope to have a surgery that will correct that soon!! There is still one tumor they have not removed but my wonderful doctor James Garrity at the Mayo Clinic in Rochester MN says they will leave it alone until or if it ever causes problems!
