We absolutely LOVED this. A few changes, though. We had a couple red peppers - not sure what kind - they looked like red jalapeños. Anyway, we threw two of those in, chopped, and those were the only peppers we added. We forgot all of the spices! We used one big can of white beans NOT drained, a full box of chicken broth, and added a big handful of frozen corn. To serve, we crunched up a bunch of tortilla chips and poured the soup over them, then topped it all with chopped cilantro and lots of cheese, and more chips as desired. Now I know what we will do every day after roasting a whole chicken! Thanks!

Very tasty recipe. Loved to use that turkey I had in the freezer. I only used 1 can of beans. Didn'r have any green chilies so I added 1 cup of hot salsa. Also I had a few veggies (carrots & green beans) left over so I added them. This was enjoyed with a salad along side. Thanks for posting

What a great way to use up leftover chicken! This is a keeper. Nice flavor, and so easy to make.

This was a great way to use that chicken in the freezer! Very tasty and not too spicy. I also left out the cheese so it was more like a soup but it's definitely in my keeper file. Thanks for the recipe!

Loved this one. The only thing I modified was eliminating the cayenne and I used a dash of jalapeno powder I picked up in New Mexico. Since we are trying to slim down after the holidays, I also skipped adding the cheese so it was more like a soup. Very good!

This is really good! I used leftover turkey in it. I will make it again, but for our tastes, I will omit the cayenne pepper. It was really spicy for us!!! I added some heavy cream to tone it down a bit. Thanks!

Pretty good chili; good use of leftover turkey. Added only 1 can of jalapenos since that's what we had but it still had a good amount of heat to it for us. Thanks for posting!

Very good. I cut down a bit on the spice by not using the can of jalapeno pepper while keeping everything else the same, and it was a nice amount of heat for us. Thanks!

This was delicious, and so quick and simple to make. I had more beans than turkey, so I adjusted those amounts slightly. In fact, I may make this again using only beans! Did not have monterey jack, but I can imagine how it would enhance the flavor. I did stir in some sour cream, and that really made the dish come alive. Thank you for sharing!
