ingredients

  • 12 cup leftover chicken (chopped or shredded)
  • 4 ounces shredded cheese (whatever you have, I used mozzarella)
  • 2 ounces salsa

directions

  • Spread the chicken evenly on a plate and microwave 30-45 seconds.
  • Sprinkle cheese over the top and microwave again until cheese is mostly melted (about another 30 second).
  • Spread salsa on to and stir all ingredients together.
  • Super tasty and super quick!

  2. This is so quick, easy and super tasty! Mixed the salsa with the chicken then the cheese on top and served over a quick Mexican flavored rice, excellent!
     
  3. I made this with left over grilled chicken and some mexican blend cheese. It was nice to be able to throw together dinner and not have to worry about pots and pans. I do think that cooking the salsa with the chicken and then adding the cheese on top would improve the flavor a bit (although I could be way wrong on this!) and I will try it that way next time!   5. Made this for lunch. It was quick and easy to make. I think I would have liked this a bit better if my chicken would have been seasoned with taco seasoning other then just grilled chicken. I added the salsa and cooked it with the chicken and then topped with cheese and melted that. Made for Spring PAC 2011.

Not too many years ago I discovered I adore cooking but, unfortunately, I cook a little like my father. We both see recipes as a nice place to start but hardly a place to end a dish. Everything (usually) ends up tasting delightful but it can be frustrating when somebody asks for the recipe. Along with my love of cooking comes my love of Central America. I blame the empandas in La Ceiba, Honduras for that.
