I absolutely hate leftovers. The only way I can eat them is to use them in another recipe. This one is simple and the kids love it!!
- 1 -2 cup cooked boneless beef roast, cubed (use leftovers)
- 1 (10 3/4 ounce) cancondensed vegetable soup
- 2 -3 tablespoons water
- Combine all ingredients in medium saucepan.
- Heat and serve over mashed potatoes.
My entire family loved this! I use the same amount of meat, 2 cans of veg. soup and a can of cream of mushroom. YUM! We had it on mashed taters, but it would be good on rice also. Great meal for the economy right now!
I liked this a lot and found it an easy and tasty way to treat left over roast beef, which was a problem I never had when my son was home. I added a can of veg-beef barley soup, a small can of tomato soup, about a cup of frozen mixed veggies and the pre-cooked brown rice that you warm in the package in the microwave. This is excellent and savory and my husband thinks I'm a great cook! Thanks, Lisa Lou Who!
