My mother is german and she made this often after holidays with left over mashed potatoes. We always made this recipe and put jam or jelly on them and they are wonderful!!!

In talking with a well schooled woman of the culinary arts the results for this recipe are based on the cooks leftover mashed potatoes. Some women make them way to runny or rather they have too much liquid, while others make them dry. Rather than expressing disappointment in the recipe the best thing would be for the person making this dish to look at their ingredients. I followed the recipe to the letter and not problems. I even added onions to the mashed potatoes. Less eggs for watery mash ans more eggs for dry mash. They fry up very nicely and DO NOT fall apart. I stuffed mine with sausage. Great recipe

I thought these were just great. We had a bunch of restaurant bought leftover mashed potatoes so they weren't as good as mine ;) but I needed to use them. I used 3 cups of mashed potatoes, two tablespoons of grated parmesan cheese and a heaping quarter cup of flour. I fried in a non stick skillet in about a tablespoon or more of coconut oil, about 7-8 at a time measuring out about 2 heaping tablespoons per pancake. I cooked them on medium low, just letting them brown until they were very crispy. I pressed each one gently so they would flatten and they were wonderful! Served with sour cream for the perfect zip. I will use this again, with homemade potatoes which will be even better. :)

These were REALLY GOOD & easy to make!!! Normally, I use shredded raw potatoes for Potato Pancakes, but this is definite keeper!!! They were nice & crispy on the outside & just melt-in-your-mouth creamy inside. THANKS for sharing!!!

I love it. I cut the recipe in half I used onion parsley and mashed potatoes from a roast i made the other night :)! I used a little bit more flour though i used a 3 tbsp. I added a pinch of salt and pepper while they were cooking and they were great!
