Who knew that leftover mashed potatoes was the secret ingredient to GREAT meatloaf? This is one of the best meatloaves I've tried - and I've tried a lot. Tender, juicy, very flavourful. Highly, highly recommended. (and it'll use up your leftover mashed potatoes! ;-)) Note: This little bit is being tacked on cause I forgot to include it in my first review. I was lazy and didn't even bother to saute the onion and garlic, just dumped them in, raw and minced, into the meat/potato mixture. Worked just fine (and no skillet to wash up).
All the while I was preparing this it looked vaguely familiar. When I tasted it, the bulb lit. It's a variation on Shepherd's Pie! Of course, I love Shepherd's Pie so it was OK with me.
Sorry i couldnt rate this higher it just didn't do it for my husband and I we didnt like what the oregano did for it but thats just us. The mashed potatoes made it very moist though so that is a great tip.
This made a huge meatloaf. I used ground buffalo and beef. I used leftover goat cheese and green onion mashed potato #61148, so I did not add any additional garlic or onion. Great for meatloaf sandwhich. Will make this again. Thanx!
