Leftover Lamb & Rice Casserole

"I like to cook boneless leg of lamb, but with just two of us there are always leftovers. This satisfying casserole is easy to put together and tastes great. I use canned gravy for this dish."

  1. Quite good! I had some leftover lamb after Christmas supper and didn't want to waste it. Kids and adults ate it up. I used an envelope of Knorr Classic Brown sauce and that tasted fine. I forgot the salt and was glad I did because the dish didn't need it (and I like salt). Thanks.

  2. We really liked this casserole! I had leftover cooked brown rice in the freezer & leftover leg of lamb in the fridge. This came together very easily & was very tasty. Thanks!

My husband, Paul, and I enjoy travel, good food and spending time with family. We have six fun, busy kids (blended family). I adore greyhounds but don't currently have one. They are sweet, calm dogs. I can highly recommend adopting a retired racer. Update - We did recently adopt a Staffordshire/Shepard mix from a rescue group. He's lovable and sweet, though needs to be much more active than our old greys did. I have lived in California, Pennsylvania, New York, Oregon, Colorado, North Carolina, Austria (you know, The Sound of Music) and Germany (ahh Bavaria!)
