Oh my gosh, this is perfect. I had a bunch of small amounts of leftovers and this worked perfectly. I used some beef from our Sunday Gravy, cuban pork and ham chunks. For the veggies we had hominy, green beans and mushrooms. I used cream of mushroom, and pork stuffing mix. So good. Thanks for the great idea for leftovers.

This is my new "go to" recipe for leftovers. I have changed it up and used spanish rice or seasoned italian risotto instead of the stuffing. I have made this with every type of meat and veggie, cream soup you can imagine.

As a budget stretcher we have one meal per week (usually Saturday) that is nothing but leftovers from the week. I used to do a "buffet" type thing and just heat up the individual leftovers or make soup but now we have this at least once a week with homemade bread/rolls and a nice garden salad. It makes leftovers not "feel" like leftovers. Thanks

I have to say I hate leftovers, and trying to use them up. I found this recipe and now it's the only one I will use no matter what I have left over.
I had pork leftover and just started going thru the fridge, found some lima's,frozen cubed potatoes, can of mixed veggies, cup of cheese, cream of celery soup. I had no dressing, so I put a can of biscuits on top...........used all my favorite spices and BAM I had dinner.

This was great! I used leftover pork roast and didn't add veggies due to family taste. I probably had close to 2 cups cheese. Thanks for the recipe!

I never really knew what to do with all the leftovers that were just enough for one person. So I used them to make a late-night snack for myself. Now with this recipe I can make them in a meal to serve 4. I am the only one to notice that the dish looks a litlle funny indeed. The others are busy eating! Thanks for posting!

I love this casserole! I had a bunch of left over shredded chicken from tacos and quesadillas, and left over carrots, green beans, and brussel sprouts. I used cream of chicken soup and home made croutons for the stuffing mix. I made these in 5 ramekins for mini casseroles to throw in the frezzer and heat up thru out the week. Lovely recipe that you can do so much with!
