      Just what I was looking for! I have tried to make potato pancakes out of left over potatoes before but they never stayed together.....the bisquick was just the ticket....that was the ingredient I have been missing! Thank you so much! Used leftover potatoes and stuffing from Christmas and they made a meal with a side of fruit!! Thanks again!!

      My mother makes a similar, easier recipe with her leftover mashed potatoes. She adds a beaten egg, minced onion, minced green pepper, salt and pepper, and finely crushed cracker crumbs. She shapes the mixture into cakes then fries in oil of her choosing.
