Left over Make over Turkey Pot Pie

This is a great way to use up left over Thanksgiving or Christmas Turkey. A great twist on traditional pot pie!

Great idea, but I didn't like the dressing. I made a second batch with seasonings and have frozen it. I hope that this doesn't taste too bland.

We also made individual pot pies. I would suggest only adding the top, not a bottom. Way too much dough. We made our own crust.

Ingredients Nutrition

  • 1 lb turkey, cut into bite size pieces
  • 2 tablespoons Italian dressing
  • 2 cups frozen mixed vegetables
  • 1 (10 3/4 ounce) can98% fat free condensed cream of chicken soup
  • 14 lb Velveeta cheese, cut into 1/2-inch cubes (or store brand)
  • 1 sheet frozen puff pastry, thawed (1/2 of 17.3-oz. pkg.)
  • 1 egg, beaten

Directions

  1. Prehear oven to 400ºF.
  2. Heat and stir turkey in dressing in large skillet on medium heat until warm. This can also be done in a microwave.
  3. Stir in vegetables and soup. (I dice an onion and use frozen peas, carrots, lima beans, and white corn)
  4. Spoon into greased 9-inch square baking dish; top with cheese.
  5. Unfold pastry sheet; place over turkey mixture. Fold under edges of pastry; press onto top of baking dish to seal.
  6. Brush pastry with egg. Cut several slits in pastry to allow steam to escape.
  7. Put casserole dish on baking sheet. (incase of overflow)
  8. Bake 30 minute or until crust is deep golden brown.
  9. Let stand 5 minute before serving allowing to set so when served it does not run.
