This quiche was wonderful Chrissy, thank you so much for sharing, we enjoyed it very much. I only made a half the recipe, it was perfect for two with leftovers for lunch. The quiche was very quick and easy to make, with great texture and amazing flavours. It was big, tall and filling, just full of ham, cheese and lots of vegetables. I will certainly make again.

Excellent quiche! If you are not using a deep dish pie crust, you will need 2 frzn crusts. YUM!

Amazing quiche, the best I've ever had! I made this for an "Anti-Thanksgiving Thanksgiving" party and it was such a hit. I substituded about 4 slices thick-cut bacon, chopped, for ham and sauteed it with the leeks and mushrooms. This also made two quiches for me (luckily I had two crusts) for some reason. However that was great because everyone devoured them.

FABULOUS Quiche! I recently bought a nice deep pie dish and this was perfect! Andy had 2 pieces and I had one and we still only ate about 1/3 of the pie! (It's nice and big!) I had no leeks, so I sweated one medium cooking onion. It was still great! Thanks Chrissy T!

I made this for Mother's Day brunch and it was a huge hit! You described it perfectly... "mild but flavourful". We loved it. I used only 2 large leeks and 8 eggs and found it filled my biggest pie dish just right. I used mozzarella this time but next time I'll try one of your other suggestions just for a change, although it was perfect with the mozza. Thank you for posting this wonderful recipe, Chrissy.
