Fry the onions leeks and spring onions in olive oil for on high for 2 minutes and reduce down to a medium heat for 5 minutes.

add the carrots and garclic and coninue to cook for another ten minutes.

add the potatoes and cook for a furtehr 5 minutes. add the remaining ingredients and simmer for about 40 minutes until the carrots and potatoes are soft.
I love all the onions and garlic in this, which is one of the reasons I wanted to try it. I like most things about it, except that by not using broth, the soup was, well, watery. It lacked flavour, the marmite just wasn't enough, so I added broth powder. That made it better but still lacking a little something. I think this is one of those soups that tastes better the next day. I mashed up the potatoes a bit and ended up with a hearty soup though. Thanks!
