This is what I would do when making roast pork - boiling ensures that the meat is cooked through. The only difference in my method is that I prefer to roast the meat in an oven at the highest temperature to get that crispy crackling (yum!) instead of deep frying which causes splatters. It's healthier that way.

Crispy and absolutely delish! Thanks Kikai. My aunt Cora was the lechon kawali queen in my Mom's family and there's no way she will part with her recipe even if I'm thousands of miles away.
