Lebanese Bulgur

  • Heat the oil in a medium saucepan over medium heat.
  • Add the onion and cook until lightly browned, about 3 minutes.
  • Add the garlic and cook for another minute.
  • Stir in the tomatos and basil, cooking 2 more minutes.
  • Stir the bulgur into the tomato mixture, making sure that the bulgur is well coated.
  • Stir in the hot broth, reduce the heat to low and cook, covered, for 5 minutes.
  • Add the honey, tomato paste, salt, pepper and cayenne to the bulgur mixture.
  • Continue to cook, covered until the bulgur is tender and all the liquid has been absorbed, about 25 minutes.
  • Turn off the heat and let sit for 10 minutes.
  • Sprinkle the parsley over the top.

  1. I love this stuff it's a nice change from pasta & rice which I love. I added a few chopped mini carrots along with zucchini & yellow squash and red pepper flakes. I even ate it for breakfast and topped it with a fried egg, the runny yolk was amazing mixed with the Bulgur & veggies. Now I'm going to try it on my hubby this week! Thanks for sharing!
     
  2. This was my first time trying bulgur. It's a great recipe. (It reminds me of my cabbage roll stuffing.) The only thing I changed was to reduce the olive oil by half. Next time I'll try it without the honey as it seemed a little sweet. But overall, I have to give a 5 star rating!

  4. This was amazing! My partner, who always turns up his nose at bulgar wheat, cous cous etc has just eaten 2 portions and asked if he can take some to work for lunch tomorrow. We ate it with some chicken and roasted veg.<br/>Its quite easy to make and only used ingredients that i usually have in the store cupboard anyway. I found that stirring every 5 mins and adding a little more stock or water each time stopped it from burning. I used tinned tomatoes.
     
  5. I think the oil is heavy, I strained it off in the end. next time I will try 1/3 to 1/2 I think that will improve the recipe. I have been to Lebenon and dont remember too much oil in the food I ate. I like this recipe particularly because it is vegan so I think it is worth pursuing to get the right balance/

Tweaks

  1. Use only enough oil necessary to sauté the onions and garlic. 1/3 of a cup of olive oil is way too much. Having made it both ways, I can say that the oil is not missed.
     
  2. used fresh basil instead of parsley , it gets more "italianized"
     
  3. Tomatoes (canned chopped) and quinoa/bulgar wheat mix instead of only bulgar wheat.
     
  4. What a fabulous recipe for bulgur, which I find to be a chewy and satisfying grain. I used only 1/4 of olive oil and substituted drained canned diced tomatoes for the fresh because I had no fresh tomatoes on hand. I also stirred in the parsley at the end and then topped with a dollop of Greek yogurt and more parsley. Thank you for sharing your wonderful recipe! My husband and I happily ate all the leftovers and I'm planning to make it again this week.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
