A great way to stretch a pound of lobster meat!

  1. In large sauté pan or saucepan melt butter.
  2. Add Onions and garlic.
  3. Cook on low heat for 2 minutes.
  4. Add mushrooms and cook 3 minutes.
  5. Stir in flour and cook 1 minute.
  6. Add Sherry and clam juice.
  7. Cook until mixture is thick.
  8. Add light cream, lobster, and the rest of the ingredients.
  9. Simmer for 10 minutes.
  10. Serve over your favorite pasta with your favorite garlic bread!

Really, really good. I scaled the recipe down to two servings. As you said, it's a great way to stretch half a pound of lobster meat (for two). We're looking forward to having it again. Thanks for posting.

Love this recipe! Have paased it on to my bachelor brother--it's so easy to make and everyone who has eaten it has RAVED! I made a low fat version-subbing 1percent milk for the cream. Still tastes great!
