This recipe is from Vancouver's author/chef/catering and restaurant owner, Susan Meldelson. I used to make them for Christmas gifts.
- 1 cup crunchy peanut butter
- 1⁄4 cup butter
- 1 1⁄4 cups icing sugar
- 6 ounces semisweet chocolate, melted
- Mix the peanut butter, butter and icing sugar well and form into balls.
- Chill well or freeze.
- Dip peanut batter balls in melted chocolate and set on waxed paper.
This recipe is amazing. So quick and easy. I used an all natural peanut butter and since it was a smooth variety, I tossed in some chopped peanuts. Something I will be making again I am sure.
