Layered Summertime Salad

"Yum! From Taste of Home, June/July 2007. I sometimes use mini penne if I can't find gemelli. Any short cut pasta will do. You can substitute any veggies you like. Number of servings is a guess. I served it as a salad at a wedding shower and easily fed 12 people with a few leftovers."

  • Cook the pasta, then drain and rinse under cold running water.
  • Combine the mayo, lemon juice, sugar, and garlic powder for the dressing.
  • Mix the pasta, green onions, and 1/2 of the bacon together.
  • Layer 1/2 of the romaine, 1/2 of the pasta mix, 1/2 of the veggies 1/2 of the dressing, and 1/2 of the cheese.
  • Repeat layers.
  • Top with remaining bacon.
  • Chill until ready to serve.

  1. I made this for the Fall 2009 PAC. I really enjoyed this salad except for the snow peas. I did not realize I did not care for snow peas. So next time will just use plain peas. Otherwise the flavors were delicious--I will make this again and adjust to my personal preferance accordingly. Thanks for the recipe Sara!
