ingredients
- 2 cups packed light brown sugar
- 1 cup Butter Flavor Crisco
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1⁄2 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3 cups quick oats or 3 cups old fashioned oats, uncooked
- 1 (14 ounce) can sweetened condensed milk
- 2 ripe bananas, sliced
- 2 tablespoons Butter Flavor Crisco
- 1 teaspoon sugar
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon salt
directions
- Preheat oven to 350° and grease a 13x9x2-inch pan.
- Combine sugar, shortening, eggs and vanilla extract.
- Beat until well blended.
- With a spoon, stir in flour, baking soda and salt.
- Stir in the oats, reserving one third of mixture. Press the remaining into bottom of baking dish.
- In medium saucepan, combine condensed milk, bananas and shortening.
- Cook, stirring constantly on low heat, until mixture thickens resembling banana pudding.
- Remove from heat and stir in sugar, vanilla extract and salt.
- Spread over base.
- Crumble reserved oat mixture over top of filling.
- Bake 25-30 minutes or until golden brown.
- Cool and refrigerate or serve warm, cut into bars.
