I used a little extra sauce since I needed to use up some leftover marinara. I did not use the ricotta (mine turned out to be sour) so I doubled up on the Mozzarella. Turned out great! A very hearty and healthy lasagna.
This is really tasty. I went the easy route though and used a frozen bag of mixed veggies (carrots, broccoli and cauliflower) and a frozen bag of yellow squash. I cooked that all in the microwave. I used more ricotta then called for because I love it, and only used 1 box of spinach. I think 2 would have been overwhelming for me. I love my sauce so next time I will use more sauce. This was a tasty substantial lasagna and I didn't miss the meat 1 bit!
