Found this while trolling food.com. Thought it sounded interesting. I followed the recipe, omitting mushrooms (yuck). I was a little nervous about the dollop and ladle full instructions in the recipe. So, being a little more precise, I did the math and it's 1/2 tablespoon of the ricotta mixture, 2 tablespoon of sauce, and 1 tablespoon of mozzarella. I ended up with a little extra sauce. It was very tasty, came out of the muffin cups ok, and most of all it got a big thumbs up from my teenager.

Warning - these end up being large and messy - even though the picture shows them as a bite-size finger appetizer. The tips are crunchy and the bottom is soft (making them message as the meat/sauce/cheese go everywhere). I adjusted the recipe to just make 1 layer and I put that in the middle of the won ton wrapper and rolled it into a mini-burrito.

These are the easiest and fastest lasagna cups I've tried. Simple ingredients and not having to boil some noodles is a real time saver. They hold their shape and are nicely firm if made with a good thick sauce. They are very popular with the fast food crowd and I always keep some in the fridge now, always have an emergency meal ready for those long days at work.
