Lars' Tuna Calabrese Melt Sandwich

"Tuna, basil pesto, tomatoes & melted mozzarella. How could you get any better than that? This isn't really a recipe, more of a guidline. Experiment with whatever you've got on hand. I'm eating this sandwich right now with pepperoncinis on the side. Yum! :)"

  • 1 (5 ounce) can tuna (works with salmon & chicken too)
  • 1 -2 tablespoon mayonnaise (more or less to your tastes)
  • 1 -2 tablespoon basil pesto
  • 1 tomatoes, thinly sliced
  • 4 -6 slices mozzarella cheese (more or less to your tastes)
  • 4 slices bread, toasted

directions

  • Preheat oven or toaster oven.
  • Toast bread.
  • Mix together Tuna, Mayonnaise and Basil Pesto.
  • Spread as much or as little of the tuna mixture on 2 slices of toast.
  • Top with 1 or 2 slices of tomato.
  • Top that with Mozarrella cheese.
  • Place under broiler or toaster oven until cheese is gooey & melty.
  • Remove from oven.
  • Top with other slice of toast and enjoy!
  • * i make my own basil pesto, garlic, lemon juice, parmesan & olive oil. I make it thick like a paste and not a sauce. Sometimes I or cilantro, and feta cheese just to give it a bigger flavor.
