This stew is so delicious and so easy to make. I like to serve it with mashed potatoes since it makes it own gravy.
- 2 lbs lamb, cut into cubes
- 1 1⁄2 lbs raw mushrooms (porcini or shiitake, or any you have on hand)
- extra virgin olive oil
- kosher salt
- 2 teaspoons red pepper flakes
- Drizzle oil liberally over lamb and whole mushrooms in casserole dish.
- Sprinkle salt and red pepper flakes.
- Bake covered at 325 for 1 1/2 hours.
