Lamb Chops With Curried Cauliflower

An easy recipe to follow, impressive results. This cauliflower is amaaaazingly good!!!It was done before my lamb chops and I couldn't stop helping myself to more. I used parchment paper over the baking sheet, and tossed the cauliflower, onions, oil and seasonings in a bowl prior to turning out onto the sheet. Served basmati alongside and thought the yogurt sauce outstandingly good on top of the rice and cauliflower. Haven't said anything about the lamb, and I guess in this case it was the quiet but welcome accompaniment to the other spectacular aspects of this meal. Thank you for posting!

  1. Prehat oven to 475 degrees. Mix yogurt, cilantro or parsley, lemon juice and garlic. Season to taste and set aside.
  2. Cook rice following packet instructions.
  3. Break cauliflower into large florets, place on baking sheet with sliced onions. Drizzle over oil and sprinkle curry powder. Season with salt and pepper and toss until reasonably well coated.
  4. Roast in preheated oven, turning occasionally until tender and slightly browned in spots (about 25 minutes).
  5. Heat a large skillet over medium-high heat and sprinkle 1 teaspoon salt evenly in the bottom. Add 4 chops and cook 2-4 minutes per side for medium rare chops. Transfer to plate.
  6. Wipe skillet clean with paper towel. Repeat with remaining 4 chops.
  7. Serve with rice, cauliflower, and yogurt sauce.
