1. What a great looking little cookie that would be a fabulous addition to any holiday tray. A step up from your normal oatmeal cookie w/the added addition of choco-chips. I think butterscotch chips would also be a great idea. I did use 1/2 the amount of chips recommended, and still had plenty left.
Thanks for a great cookie that will be repeated again Dorit~
Made for KK's recipetag~

 2. These are wonderful and easy and just might be on my list of favorite cookies of all time. I dropped my batter maybe a little larger than teaspoonfulls and put 6 cookies on a tray at a time. I only had one double broiler so I was going to do semi-sweet and then white chocolate but it turned out that I had more than enough semi-sweet with just the 1 cup of chips that I didn't need to melt the white chocolate. Next time I will have to use less so that I can try both! I got 17 sandwich cookies.

 3. Not going to give stars, because I haven't actually made your recipe. However, I do make Lace Cookies all the time - a favorite of my daughter. I never thought to make them into a sandwich cookie. What a clever idea. Might be fun to melt some Andes mint candies and use that for the filling too. Thanks for inspiring me to take Lace Cookies up a notch.
