      Preheat oven to 375°F.

      Line cookie sheet with buttered foil.
    3. 3
      Mix flour and oats together in a medium bowl.
    4. 4
      In a large bowl, mix together butter, sugar and corn syrup.
    5. 5
      Add milk to the butter mixture and mix well.
    6. 6
      Stir in the flour mixture and mix well.
    7. 7
      Drop batter by level teaspoonfuls 3 inches apart onto prepared cookie sheet.

      Press each cookie slightly with the back of a fork or spoon.

      Bake for 8 to 10 minutes or until cookies have spread and are browned around the edges.

      Immediately transfer the foil and cookies to a wire rack.

      Peel cookies off foil after they've cooled.

      Now spread a thin layer of semi-sweet chocolate on the bottom of 1/4 of the cookies and white chocolate on 1/4 of the cookies.

      Top each with the bottom side of the remaining cookies.

      What a great looking little cookie that would be a fabulous addition to any holiday tray. A step up from your normal oatmeal cookie w/the added addition of choco-chips. I think butterscotch chips would also be a great idea. I did use 1/2 the amount of chips recommended, and still had plenty left.

      These are wonderful and easy and just might be on my list of favorite cookies of all time. I dropped my batter maybe a little larger than teaspoonfulls and put 6 cookies on a tray at a time. I only had one double broiler so I was going to do semi-sweet and then white chocolate but it turned out that I had more than enough semi-sweet with just the 1 cup of chips that I didn't need to melt the white chocolate. Next time I will have to use less so that I can try both! I got 17 sandwich cookies.

      Not going to give stars, because I haven't actually made your recipe. However, I do make Lace Cookies all the time - a favorite of my daughter. I never thought to make them into a sandwich cookie. What a clever idea. Might be fun to melt some Andes mint candies and use that for the filling too. Thanks for inspiring me to take Lace Cookies up a notch.
