Great recipe echo! I left out the cilantro, my DH can't stand that herb, served with toast for a weekday lunch, thanks echo!...Kitten:)

My husband is from Iran. He and I go to Iran at least every two years. So I must say you have the right recipe. This is a great anytime dish and very filling. For those who can't use real eggs, you can use egg-beaters. Open your minds... Your stomach will thank you. God Bless mankind and help us get along.

A delicious omelet loaded with good stuff! I quartered the recipe and actually used icegerg lettuce, cause that's all I had. I left out the saffron. I had it for brunch. Thank you!
