a fantastic crunchy mix of diced veggies and garbanzo beans that goes well with any dressing or sauce you could imagine. Very healthy, packed with protein!
- 1⁄2 cucumber
- 1 small zucchini
- 1 green bell pepper
- 1 head broccoli
- 1 (14 ounce) can garbanzo beans, drained
- dice all veggies.
- drain garbanzo beans.
- mix all ingredients together.
- top with dressing/sauce of your choice. I love it with honey dijon.
- Makes 4 lunch sized servings, or 6-8 as a side salad.
I halved the recipe and used a lemon poppyseed dressing and used red peppers instead of the green. What a great salad and you can add more or less of any of the ingredients. Made for Healthy Choices Tag Jan 2009
