This muffin recipe was given to me by my Weight Watcher leader. It uses a convient mix to make really good, low point muffins. 1 regular size muffin or 3 mini muffins for 1 point. The muffins get sticky so it is best to freeze them and thaw as needed. Use fat free muffin mix of any fruit flavor.
- Add water to cereal; let stand 5 minutes.
- Stir in muffin mix (including any fruit) and apples.
- Place in sprayed muffin tin.
- Bake at 350 for 20-24 minutes.
