These are great shortbread cookies! The powdered sugar and butter whipped up easily by hand, so I didn't even have to pull out my mixer. I made a half batch, and omitted the 1/2 egg yolk (really, that would have been strange to try and measure!) but I added a tsp of water to make up for the missing liquid - they held together fine without the egg.
