Kohlrabi Apple Edamame Slaw

ingredients
- 3 kohlrabi
- 2 carrots
- 1 apple, use your favorite, I love a Braeburn
- 1⁄2 lemon, juice of
- 4 radishes, more if you like
- 1 cup shelled edamame
- 1 small onion, chopped

for dressing
- 2 tablespoons Dijon mustard
- 1⁄2 lemon, juice of
- 1⁄4 cup white wine vinegar
- 1 teaspoon sugar
- 1 shallot, minced about 1 T
directions
- Grate apple and veggies and sprinkle with lemon juice and ground black pepper.
- Mix together first 5 ingredients of dressing.
- Blend in oil.
- Pour over veggie mixture.
- Refrigerate for at least 30 minutes.

I had harvested some kohlrabi from my garden, and since temperatures where in the triple digits, I wanted to make a salad. When I found this recipe I couldn't believe that I had all the ingredients needed. It was very tasty, slightly sweet from the apple and just a wonderful summer side dish. After making the dressing, it seemed a little to strong in mustard taste, so I added about 1 Tbls of mayonnaise to the dressing and a little more sugar to taste.Oh yeah, and a little garlic from the garden in the dressing.

I had received kohlrabi from a local farm co-op plan and decided to try this recipe. I was making the dressing when I realized that you'd forgotten to include how much oil to use. I guessed and used about 1/4 cup plus a dollop of mayo. Overall this was quite nice, although next time I'm going to omit the onion, as it almost overpowered the other flavors.

I'm a busy work at home mom of 2 young boys. My husband is frequently out of town for long spells for his work and that's when I turn to the 'zaar for inspiration.
My husband loves to cook so when he's home it's all up to him and when he's gone it's fun and sometimes frustrating to plan menus that will not be rejected by the kiddos while containing wholesome ingredients.
I'm pretty picky about the foods we eat. I only buy organic meats and dairy, nothing with high fructose corn syrup and as many local and/or organic fruits veggies that I can get my paws on.
We have a wonderful delivery company called Greenling that I rely on for local fruits and vegetables. They serve Austin and San Antonio but it's a wonderful idea that I hope crops up everywhere.

If you haven't heard about any of these things it's time to check it out. It's eye opening. I believe it is very important to know where our food comes from.
That said, I'm not a food nazi, I just like to know that I'm feeding my family the best quality food available. It's not cheap but I think it's worth more than money.
