      This is a gem!!I altered just a little as I did not use carrots but mushrooms instead,and dried herbs,but that is what is so good about this recipe,and next time I might even put some sort of meat in them,just for husbands preference because I thought they needed nothing else.This is a fast recipe that taste like 5 star,and very easy to assemble!!It's a keeper at my house,thanks Bethany.

      Another great recipe Bethany! It's very hard for me to find nice quality fresh herbs so I used dried. I boiled the entire pkg of lasagna noodles but only really needed half, so next time I will know to either double the filling/sauce or just use 1/2lb of noodles. I only had baby carrots so I just shredded a bunch of them and followed the rest of your directions as stated. We loved the flavors and it was virtually guilt-free compared to the usual lasagna recipes we've had. The rolls look so elegant too.

      These were wonderful! I halved the recipe, and used fresh herbs. It was so easy to pull together, it was fantastic for a weeknight. I used instant lasagne and soaked them briefly in boiled water to soften. We will definitely make again, I am always looking for tasty, healthy recipes.

      This was SOOO good. I have been looking for easy recipes without meat. I used fresh bagged spinach which I wilted just a bit. I also added some lightly sauteed green onions, garlic and mushrooms. The directions didn't say what to do with the egg, but I assumed it just went in with the mixture. Thanks!

      Bethany, this is just delicious!!! It tastes like spring with all the fresh herbs and veggies. I love how the carrots have a little crunch to them because of the shorter cooking time. This will be in regular rotation at our house, for sure -- maybe with some roasted chicken minced up and added to the mixture next time. I just used cheap Ragu for the sauce, and it was perfect -- the filling has so many flavors, you don't need a fancy sauce.
