Drink up the health benefits of fresh tangy kiwi fruit in this deliciously sweet cocktail with just a hint of creamy coconut.
- 1 kiwi fruit
- 1 cup pineapple juice
- 1⁄2 teaspoon shredded coconut, plus extra
- shredded coconut, to garnish
- Peel the kiwi fruit, cut into chunks and place in a blender. Add the pineapple juice and coconut and whiz until smooth.
- Serve garnished with a little extra coconut sprinkled on top.
