Kittencal's White Cake

"7-Up or Sprite is the secret ingredient that takes this cake to another level, do not allow the soda to go flat pour right from the bottle or can --- this cake bakes out beautiful with no dark over cooked edges --- I recommend to use diet soda regular is too sweet but regular will work fine also ---this also may be baked in two 8-inch round cake pans and it makes the perfect wedding cake!"

  • 510.29 g package moist deluxe white cake mix (such as Duncan Hines Moist Deluxe Classic White Cake Mix)
  • 78.78 ml diet lemon-lime soda (such as diet 7-Up or Sprite)
  • 78.78 ml vegetable oil
  • 4 large egg whites
  • 236.59 ml sour cream

directions

  • Set oven to 350 degrees F (set oven rack to second-lowest position).
  • Mix all ingredients in a bowl on low speed until blended (about 30 seconds).
  • Beat at medium speed for 2 minutes more.
  • Pour the batter into a greased 13 x 9-inch baking pan (the batter will be quite thick so you will need to spread out with back of a spoon).
  • Bake for about 30 minutes or until cake tests done.

  2. Wow, nearly 9 years later and I pulled this recipe out of my collection to make for my Mom's 91st birthday. I'm so glad I did. I made both the cake layers (two 8" cake layers) and the frosting the week before I was going to serve them and I froze both cake layers and frosting. The night before I was going to serve the cake, I put the cake layers and frosting in the refrigerator to thaw. The next morning the cake layers were nice and moist. The frosting just needed to be stirred up with a spoon to get it back to a smooth consistency. Rave reviews from everyone. I recommend you save this recipe to your recipe collection, also. original review written on 9/6/2009 This was served to rave reviews at a birthday party today. I followed the instructions exactly, including using Duncan Hines Moist Deluxe Classic White. I baked it in two 8" round cake pans. On Kittencal's suggestion, I paired it with recipe #90142. It was perfect. I was proud to serve this cake and will make it again.
     
  3. Excellent! So tender and light. I used a yellow cake mix and diet 7-up. It's still on the sweet side even using diet soda but really good. I made 2 8" rounds, a strawberry compote filling and topped it with a cream cheese, whipped cream frosting. Pure heaven. Thanks for this great recipe!

Tweaks

  1. I made it in a 9x13 pan and frosted it with a vanilla buttercream and topped it with sprinkles. But it's easy to turn into a layered cake!
