This was great! The filling was so good! My husband hates spinach, but he loved this! The spinach flavor is not overpowering, and the onions and garlic really make it perfect. I had to use my favorite jarred sauce to save on time, but next time I can't wait to make it with your recipe for marinara, and I think I will use the big shells to make it easier to stuff. Thanks AGAIN Kittencal. You are my foodie idol!
Could only find canneloni in the shops (which didn't require precooking), but it was very easy to stuff and worked out just great. I'd always wanted to try a recipe like this but thought it a bit too fiddly for me as a busy mum, but this only required a bit of forward planning and the putting together was actually very simple with delicious results.
Yumm! we used 10 manicotti shells and chopped up 1/2 of a yellow onion and 2 cloves of garlic. We put them in the mix raw (didn't sautÃ©) and it was still excellent. Thanks, Kittencal!

I sauted the onion and garlic but it got too brown and I didn't think it would look very appealing so I substituted garlic and onion powders. I used Kitten's Marinara Sauce and left out the spinach. I also used an Italian cheese blend instead of just mozzarella and I think that gave the flavor of the filling more depth. This was very well received.
Made this tonight, along with your wonderful sauce you have posted here. The only difference was I didn't use pasta tubes, I made crepes and rolled the stuffing in them. Very light and delicious.
Wonderful vegetarian version of this dish.
Great recipe for beginner vegetarians. My whole family really enjoyed it. We used shells instead of manicotti. Easy to fill and made "more" servings. Also added extra onion and doubled the seasoning the second time through. Got a stronger taste.
This is the MOST Delicious Manicotti!!! All of the flavors come together beautifully! I made the filling in the morning and stuffed the shells. So the filling had time to blend for about 6 hours. I'm sure the leftovers will be even more delicious! I used Kittencal's Italian Tomato Pasta Sauce and Parmesan Meatballs that I always keep in my freezer.
