Kittencal's Spinach-Cheddar Patties

- 2 (566.99 g) box frozen chopped spinach (drained well, squeeze out any excess moisture with hands)
- 44.37-59.16 ml butter (or use vegetable oil)
- 2 medium onions, finely chopped
- 14.79 ml minced fresh garlic
- 236.59 ml seasoned dry bread crumb (you might need a little more)
- 9.85 ml seasoning salt (or to taste, or use white salt)
- 2.46 ml cayenne pepper (or to taste, or use black pepper)
- 3 large eggs, slightly beaten
- 236.59 ml grated cheddar cheese (or use 1/4 cup Parmesan cheese)
- vegetable oil (for frying)
directions
- In a large skillet heat the 4 tablespoons butter or oil over medium heat.
- Add in onion and garlic; saute for about 4-5 minutes or until softened then place into a large bowl along with the butter from the skillet.
- Add in squeezed spinach, dry bread crumbs, 1 cup cheddar cheese or 1/4 cup grated parmesan cheese, seasoned salt and cayenne pepper; mix to combine.
- Add in beaten eggs; stir to combine (if the mixture is too soft then add in a little more breadcrumbs).
- Cover and refrigerate for about 3 hours or up to 24 hours.
- Using your hands shape the spinach mixture into small logs (about 3-inches long, I used greased hands).
- Place a thin layer of oil in a skillet over medium-high heat (use enough oil to cover the bottom of the skillet).
- Fry the logs for about 3 minutes on each side or until golden brown.
- Transfer to paper towels to drain any fat.

Made 1/2 recipe for the two of us and we had no trouble polishing it off with some sliced hard boiled eggs. Used fresh spinach and whole wheat bread crumbs. I used far less oil than called for and only one hour chill time since I forgot I needed any until it was too late. Dh is still convinced it had sausage in it. I'm not telling him any differently. Excellent recipe, Kitten.

These were delicious and a nice change as a side dish. I had a big bag of fresh spinach, so I cooked a good big amount, but of course it ended up shrinking! I squeezed as much moisture out as I could and chopped it up. I guesstimated amounts, using 2 eggs and enough bread crumbs to soak up the liquid. I used parmesan cheese, ordinary salt, and I did add the cayenne. I formed into "logs" and they browned nicely.I agree with Kittencal that people who think they don't like spinach would like these, because the spinach flavour is not pronounced. I love spinach and I loved these because the other ingredients blended so nicely with the spinach! Great recipe!

Wow! These were just SO yummy. Everyone devoured them eagerly so they are certainly destined to be a regular on my menus! Great, very easy to follow instructions! The only changes I made were to leave out the cayenne pepper (personal taste preference); I used freshly ground black pepper instead. And I used 1/4 cup of breadcrumbs and 3/4 cup flax seed meal (some extra nutrition sneaked in there!). I also added 1/3 cup of cheddar as well as 1/3 cup of parmesan. Thank you, Kitten, for another wonderfully flavoursome garlicky spinach recipe!
