Kittencal's Old Fashioned Rice Pudding

ingredients
- 177.44 ml uncooked white shortgrain rice (Aborio rice is good)
- 177.44-236.59 ml sugar
- 0.25 ml salt
- 946.0 ml milk or 946.0 ml half-and-half
- 396.89 g can evaporated milk
- 4.92 ml vanilla
- 236.59 ml raisins (optional)
- 44.37 ml cornstarch
- 44.37 ml water
directions
- In a large heavy-bottom saucepan, cook rice according to package.
- Drain any additional liquid; add the sugar, pinch of salt, half and half, evaporated milk and vanilla.
- Mix, and simmer on low heat for 20 minutes.
- In a small bowl, mix the water and cornstarch together until smooth; add to the rice mixture; simmer for 20 minutes longer.
- Let cool, add the raisins.

OMG Kitz you did it again!!! I always know when looking for a recipe if you have one in the catagory to make that first. I didn't have the Aborio Rice but did have Calrose Short Grain, No evaporated milk so substituted Heavy Cream which I pretty much always have a quart or two of... no raisins??? Used dried cranberries instead. Was a tad bit concerned since my old recipe of Rice Pudding was made with eggs... but figured what the heck you know what you are doing... so went with it. Am I ever glad I did, this is really a very nice rich, but not too rich pudding that will make a wonderful dessert with tonights meal and because I doubled it ( I do love rice pudding) I will have plenty for snacks and treats this week. Thank you for another Kittencal wonderful and delicious recipe!!!

I searched & I searched, this recipe hmmmm, that recipe / maybe? THEN .... Then I saw the name that has NEVER let me down! KittenCal ! Another of the Zaar's original startup line ! ??, aka, Charter Members! I need to pull out the old hard drive And get the badges & awards given to us all ??. Miss the chat forums - boy someone dropped the ball on keeping us all happy! BACK TO THE RICE PUDDING! Awesome! I wanted to take something special to the Quilting Room at church for our weekly meeting & pot luck, as I had 10 #'s of rice and 4 #'s Of raisins..... LoL. I made 4 batches of this - as normally we have over 20 members there .....we start at 9 am - break for lunch - someone cooks the main meat dish and everyone brings a side or dessert. I don't like the "instant " dishes from Walmart or the grocery - wanted some old time flair & flavor. This hit dead center! Worked up so easy - came together perfectly. Brought home a very empty dish all but licked clean! I had offers of date nights - as some of the husbands come and take care of coffee, and play cards while the ladies work on baby quilts for young moms that need a little extra. My husband said he would love to see me go on a date - he doesn't care for dessert without chocolate! Thank you AGAIN for another quality recipe! No changes required !

I wasn't sure about the evaporated milk ethier and it was the first time for me to cook with Arborio Rice as I have eaten Risotto but not Arborio Rice Pudding. Well, I'm a convert to Arborio Rice Pudding but the verdict is still out on the evaporated milk, I will have to tinker with that still! I made the rice pudding according to instructions and I just had some ice cold this morning {I never eat Rice Pudding warm} absolutely yummy with a tiny bit of cream! Anyone wondering as I did about the 3 Tablespoons of cornstarch it does not affect the taste in any way. Thanks again for posting this timeless recipe which will go to my Heirloom Cookbook, Kittencalskitchen!

Perfect! This is so rich and creamy with just the right amount of sweetness. I don't normally cook with evaporated milk and came upon this recipe to try to use it up. I bought the arrborio rice to use for this and I think that's what I'll always use. There's a reason this has been around for 20 years - it's fantastic!
