Make these lower fat by using low-fat mayo, sliced cheese and turkey patties ---I used to make these for my DH when he was working, I fried up an egg or two the night before an left them covered in the fridge to add on the sandwiches before warming in the microwave, the eggs are only optional make certain not to freeze the eggs with the sandwiches add then just before warming the sandwiches. These are great to grab and eat on the run! wrap each sandwich and then freeze for a quick breakfast then just warm in the microwave, it is that easy! Use your own favorite sausage patties or see Breakfast Sausage Patties of coarse you can make as many as you want the amounts are only a guidline!
- 10 English muffins
- softened butter (or use mayonnaise)
- 10 breakfast sausage patties (I use Breakfast Sausage Patties)
- 10 slices American cheese
- egg (sunny-side up or scrambled)
- plastic wrap
- aluminum foil
- Cook the sausage patties in a skillet.
- Toast each half of English muffin, then butter or spread with mayonnaise.
- Cool the patties and the muffins.
- Lay one sausage patty on top of half of a bun then top with cheese slice, top with remaining half of muffin.
- Wrap each one individually in heavy plastic wrap and freeze until solid.
- Remove the frozen sandwiches from freezer and wrap each sandwich tightly in foil to prevent any freezer burn, then return to freezer until ready to use.
- When ready to use; unwrap the sandwich from the foil and plastic wrap.
- Wrap in a paper towel and microwave on HIGH for about 50-60 seconds or until heated through.
- Add on an egg (if using) before or after warming the sandwich.
Made these this morning, had one on the way to church, thought they were very good. Next time I will have to make my patties somewhat bigger. The english muffin kinda consumed it. Anyway it is very good and I'm sure I will make again.
LOVED THEM! I was worried about how to get the eggs the right size, since I don't have an egg ring. I took a hint from one of Kitten's other recipes and it turned out great. I whisked the eggs with baking powder, salt and cream, let that sit for 5 minutes, then poured into small pyrex bowls just the right size for an egg to fit an english muffin. Then I cooked them in the microwave for 1 minute, plunked the cheese down on top of the egg to melt up a bit while buttering the english muffins. That made the egg part just the right size and wonderfully fluffy. (I only made 4, so I used 4 eggs, 1/4 t baking powder, 1/8 t kosher salt and 1 T cream.) Thank you for a great idea Kitten, hubby and I have so little time during tax season, this will really help out.
