We loved these! Made for dinner tonight as a side dish. They were very easy and quick to throw together. I used Italian seasoned breadcrumbs, so I omitted the Italian seasoning and some of the garlic powder. I also left out the seasoning salt to cut down on sodium. Ended up cutting the zucchini into rounds. I was very impressed with how they turned out - especially since my husband (who's not so much into any veggies beyond french fries ;-)) said they were good and he'd gladly eat them anytime. Thanks for the awesome recipe!!!!

Outstanding!! I changed the recipe slightly because I didn't have dried bread crumbs. I substituted corn meal and they were wonderfully crispy and flavorful. We have made these a couple times already and my kids absolutely love them. I also sprinkled lemon pepper on mine when they were done frying.

I made these this past week and they were very yummy! A great way to use up the zucchini in my garden. I just sliced them so I had rounds and panfried. Extremely easy and tasty! I used seasoned bread crumbs and dipped them in ranch dressing. I know these will be made again.

MMMMMMM! I served this for guests and we ran out because everyone devoured them...even our kids! They are soooooo good!

Wonderful as always kittencal! I used italian breadcrumbs so left out most of the spices except for the garlic powder. Loved the mixture of the flour with the breadcrumbs, made for a great batter texture. Only change I would make is more salt, but that's about just personal preference. Will definitely do again, thanks!

Kittencal just knows her stuff! These are terrific. I didn't add the cayenne so that I could taste the other flavors, and I used good ol' ranch dressing for dipping. Thanks for yet another great recipe. NiftyDeb

Tasted really good. I added a little rib rub for heat instead of the cayenne. I used 2 eggs and didn't add any water. I also dipped the zucchini in the breading first, then in the egg wash, and then back in the breading. I would recommend making up a little more breading if you do this. They cooked up really nice and pretty fast. I dipped mine in ranch dressing. Great way to use up my extra zucchini.

I had fried zucchini for the first time last week in a restaurant. I wanted to try making it at home and mmmmmm these are awesome! I halved the recipe since we only had one zucchini, but I wish we'd had another!
