These home fries turned out so nice and crispy -- I think that soaking the potatoes and then leaving them in the fridge made quite an improvement in the texture of the cooked potatoes. They didn't get overcooked and dark in the pan in order to turn out nice and crispy. I tried using the cayeene pepper, but even though I like spicy food, I felt even a pinch took away from the home-fried potato taste I'm used to. Again, your directions on how to soak the potatoes made a real improvement in the texture of this dish and I can use it for many other potato recipes as well. 4 Stars, tasty home fries with just the right amount of butter. I picture adding a carmelized onion at the end. I wasn't sure how big my cubes were supposed to be, so I reasoned that cubes are bigger than diced pieces... With this recipe I can enjoy my home fries without the guilt.
