ingredients
- 1 (3 ounce) package cream cheese, very soft
- 1⁄4 - 1⁄3 cup mayonnaise (not salad dressing)
- 1 teaspoon prepared mustard
- 1 pinch dill (optional)
- 8 hard-boiled eggs, chopped
- 1 celery rib, finely diced
- 2 green onions, chopped
- 1⁄3 - 1⁄2 cup green pimento stuffed olive (do not chop and hand-squeeze out excess moisture)
- seasoning salt & freshly ground black pepper (to taste)
- Tabasco sauce (optional and to taste)
directions
- In a bowl, combine first 4 ingredients until smooth and well combined.
- Add eggs, celery, green onion and olives; mix well and season with salt, pepper and Tabasco sauce if using.
- Cover, and chill for at least 2 hours (or more, the more time chilled the better!).
- If desired serve on pita bread, using 1/3 to 1/2 cup for each sandwich.

My DH is a truck driver, so I look for recipes he can take in his little fridge with him & quickly make sammies out of. He LOVED this recipe Kitten! & he agreed that the olive really make it. "You're just eating along and it's another Egg salad sandwich, then you bite into an olive and WHAM! It's something special!" Thanx for another great one!

Our family has always made egg and olive salad, but it consisted of eyeballing a combo of eggs, olives, mayo and mustard. I was excited to try a formal recipe. I loved the addition of cream cheese to firm things up and the squeezing of the olives to further keep the salad firm. The celery and onions were nice, but I think the salad would be fine without them if you don't have any on hand. I kept the olives whole as suggested, but decided I prefer them sliced so they can be more equally distributed. Personal preferenece... I will be increasing the mustard.

OK ... I first tasted this right after I mixed it together, and wasn't that impressed ... and then the next day I hauled it out of the fridge to make sandwiches. It was wonderful! I don't know how the flavors changed so subtly, but it was terrific. Best egg salad I've ever had. Will definitely keep using this recipe! The only way I tweaked it was to replace pimiento with capers; I didn't have pimiento, but I did have capers, so there you are. Thanks for posting this!
